Ranch Chicken And Rice

I found this recipe online and I just had to try it. With that being said, this recipe is not an original of mine. I do not know who it belongs to, but I did find it @ One Good Thing by Jillee. She has great recipes there. Now my verision is made a little bit different than hers and no where looks good as hers. I am no chef. I’m just a person learning how to cook still. Laugh at my pictures later!

Ranch Chicken

Ingredients:
-4 Boneless Chicken Breasts (Cut into strips) For mine I bought boneless chicken strips from Kroger.
-1 Cup Shredded Parmesan Cheese (Personally, that did not work out, so I will try grated next time)
-For my recipe I used GF Corn Flakes crushed up (Approx 2 cups)
-Italian Seasoning to taste (Just a pinch)
-1 Cup of ranch dressing (I made two batches so I had 2 cups)
-Oil for Cooking (I used OLIVE OIL)

Step One:
Pour oil to cover the bottom of your skillet and set on medium-high heat.

Step Two:
Have ranch in one bowl and crumbs/cheese/seasoning in another bowl

Step Three:
Take chicken strips from ranch to seasoning and lay on separate plate when finished.
Use spoon to get missing parts if needed.

Step Four:
Place chicken onto pre-heated skillet. Turn halfway through cooking. Cook until no longer pink in middle.
For mine, I like a little bit of burnt, so…I cook a little bit longer than most people.

We had rice on the side. It was delicious. Next time, I am going to use GF breadcrumbs! Maybe it’ll turn out better. Haha!

Weigh in

Hey everyone! I wanted to let you know I’ve lost 10.5 lbs since last week. That is all thanks to eating veggies and fruit.

So I cheated yesterday. I had gluten. I got sick. Real sick. Sweating real bad. It was gross. More details but I’m not gonna share. Heh.

Gross.

Well this is the weigh in update. I’m going to post a recipe and some food that people with celiac disease can eat.

Confirmed.

Life has changed for me. It just hasn’t changed for me, it also has changed for Tony too. I have found out and has been confirmed that I have celiac disease. I am okay with the news because I can finally start getting healthy. I know what is making me sick all the time. I’m tired of feeling weak, time to start feeling strong!
Now, the doctor also said my thyroid is also very high, but she said once the weight comes off, that will ease up as well. But with that being high, it will be hard to lose weight. But I’ve been eating right and will start exercising on my days off. It is a start! It’s more than what I do now.

What the awesome thing about this change in my life, is that I have great support around me. Tony made dinner last night for us, all gluten/wheat free. He made chicken and rice. He spiced the chicken up good, and everything was great. I am happy that I can have the foods I love, but just with different sides.

Another thing that I have been doing this past week, is leaving the fast food out of my diet. I can’t depend fast food anymore. It’s literally killing my insides. When you eat fast food every day, it is something that you depend on. It’s like a drug. You depend on it, because it makes you feel like yourself. I know it’s only been a week, but I feel so much better without the fast food.

At work has been difficult for foods though. I will tell you that for snacks I have been eating carrots and grapes. (My two favorite things in the world!) At work, they give us free snacks when we hit our numbers, the snacks that they give are chocolate, chips, ect… I know on my first day, I picked up a kitkat bar, and gave it away. I had my grapes and my carrots to depend on.

This disease will not define me. It will only make me healthy into the person I want to become.

I will be weighing in on Friday to see if I lost any weight with changing how I eat.

Engaged On Christmas!

You read the post title…That’s right. Your little writer on The Sam Slam is engaged! We are so excited.

I just wanted to say how thankful I am for his family. They are just the best. Words cannot describe how much I appreciate and love them. They definitely given me the best Christmas to remember.

Okay, so not only did I get a beautiful ring, I also got a Hello Kitty bike, an iPad mini, Tardis cookie jar, sonic screw driver (obsessed with Doctor Who!), a spanking brand new camera, and more Hello Kitty things, a stuffed Piglet…..and did I mention I got engaged?

I’m excited, who wouldn’t be?

So now the real challenge awaits…What type of diet should I go on for this wedding? Oh wait, I’m already on one. You know the one, where I can’t eat wheat, rye, breads, stuff that makes my stomach twist in knots because I’m allergic to all that kind of stuff. I’ve decided that going to get my 4th meal these days, aren’t the best option for me.

There is this girl on facebook who weighs more than me but lost 53 lbs, and you can tell a difference. She is beautiful no matter what, but she is losing the weight for herself. That’s what I want to do, I just don’t have the best will power. If I eat the food with gluten, I get sick. When I eat the food without gluten, I’m like a bright light bulb, ready to explode. I can tell you right now, I hate having celiac disease. Why can’t I eat all my favorite foods?

It’ll be okay though. I am a little bit broke at the moment. (All of us get to these moments…) But once I do get caught up in all my lovely bills, I will be shopping for healthier foods. Right now, rice is my best friend. Tony did make me chili this weekend. It was delicious. And then I was hungry for pizza, and so I ordered it, ate it, felt horrible after I ate it..So it really does cost me when I eat something bad. So I’m just going to stick to my rice.

My apartment complex is big, so I guess I could go walking the whole complex, but it’s freezing outside. It goes into the twenties at night in georgia. WHO WOULD OF THOUGHT THAT WOULD OF HAPPEN? It’s depressing. I can’t wait till it’s warm and I can start riding my awesome hello kitty bike. 🙂 Best dayyy ever!

Mini Nutella Brownies (GF TOO!)

So I found a recipe for Nutella brownies online through Pinterest. (My favorite site to go to for everything. If it doesn’t have it, I tend to curl up in a ball and cry. ….Just kidding I think) Anyways, I changed the recipe into mini brownies because it can be served with appetizers too. Who said you can’t have delicious brownies with delicious food? Not me…:) The cool thing about this recipe, it only has 3 ingredients!
I made two batches. One with regular flour and one with oat flour. Here’s the recipe!

Mini Nutella Brownies

Ingredients
1 Whole container of Nutella (just the small one…I use Kroger off brand because I believe it to taste better!)
12 tbsp of all purpose flour (or you can use oat flour like I did. If you use oat flour, I reccommend putting in a little of vanilla to make it just right.)
2 eggs

Step One: Preheat oven to 350.

Step Two: Mix all ingredients into a bowl and stir until it looks ooey gooey.

Step Three: Spray TBSP with pam or cooking spray and use that as your tool to put in the mini pan. (Or use a scooper if you like.) Fill 3/4 of the way.

Step Four: Put in oven for 12 minutes. If you wish to have them really ooey gooey, I would leave them for 10 mins.

Step Five: Take a toothpick and put it in one of the brownies. When it comes out, it will have just a little of the ooey gooey. You made it right! (When cooking on 12 mins, I do not do this because they are done!)

Step Six: Let it cool off and enjoy!

What could go wrong?

So, my doctors think I may have Celiac Disease. It’s not exactly what I wanted to hear before Christmas. I am going to miss all my favorite foods. I am deciding whether or not to hold a funeral by the trash can as I throw it all out. (It is all about to go bad.) Celiac Disease is (quoted from WebMD) a problem some people have with foods that contain gluten. Gluten is a kind of protein found in foods like bread, crackers, and pasta. With celiac disease, your immune system attacks the gluten and harms your small intestine when you eat these kinds of foods. This makes it hard for your body to absorb nutrients that keep you healthy.
As soon as I my doctor told me, I was kind of relieved to know what could be wrong with me. I told myself, I can finally get better. It’s only been a week, and I am still having trouble staying out of the bread cabinet. It’s all I’ve ever wanted. I don’t have what people like to call…a strong will.
My other half has been supporting me and trying to find information about what I can and cannot it. It’s been hard to find websites though. I found a list of ingredients of foods I can eat, which has been a great help at the grocery store.

This Christmas, I’ve decided that I’m going to eat turkey, veggies, and desserts I am making that I know I can eat. (Oat Flour is my new best friend.)

Is there anyone else out there just finding out that you have this disease? Find any information or recipes we can make? Please share below. I will be posting more about this once confirmed! And even if it isn’t confirmed, I am going to be eating this way because it just makes sense. I am always sick when eating wheat, and all that other junk. It’s time to be healthy.
