What could go wrong?

So, my doctors think I may have Celiac Disease. It’s not exactly what I wanted to hear before Christmas. I am going to miss all my favorite foods. I am deciding whether or not to hold a funeral by the trash can as I throw it all out. (It is all about to go bad.) Celiac Disease is (quoted from WebMD) a problem some people have with foods that contain gluten. Gluten is a kind of protein found in foods like bread, crackers, and pasta. With celiac disease, your immune system attacks the gluten and harms your small intestine when you eat these kinds of foods. This makes it hard for your body to absorb nutrients that keep you healthy.
As soon as I my doctor told me, I was kind of relieved to know what could be wrong with me. I told myself, I can finally get better. It’s only been a week, and I am still having trouble staying out of the bread cabinet. It’s all I’ve ever wanted. I don’t have what people like to call…a strong will.
My other half has been supporting me and trying to find information about what I can and cannot it. It’s been hard to find websites though. I found a list of ingredients of foods I can eat, which has been a great help at the grocery store.

This Christmas, I’ve decided that I’m going to eat turkey, veggies, and desserts I am making that I know I can eat. (Oat Flour is my new best friend.)

Is there anyone else out there just finding out that you have this disease? Find any information or recipes we can make? Please share below. I will be posting more about this once confirmed! And even if it isn’t confirmed, I am going to be eating this way because it just makes sense. I am always sick when eating wheat, and all that other junk. It’s time to be healthy.

Happy Sunday…Err I mean Easter…

If you celebrate, Happy Easter. If you don’t, Happy Sunday!

Tony has been trying hard all week to make Easter special for us. We’ve been together for over two years, but we haven’t actually had an Easter together. I’ve always been near my family for this holiday. Since he doesn’t go to church, we are going to miss that part.

I see my Easter basket on the banister, but I haven’t touched it or even looked at it but a few times. I promised Tony I wouldn’t go through until he wakes up. (That would be about 4 PM.)

Growing up, my favorite part about Easter, was spending time with family that you haven’t seen since Christmas. It’s not about eating the Easter color M&M’s or making potato casserole, it’s about the conversations with the people you love.

This year, I won’t be with my family. I don’t know if I would even consider my family, MY family. I don’t even know what to say about them.

If you are dyeing eggs today or even making the ham, have fun with your family.

Today has been one of the best days ever. I love my family. They are so special to me. I have definitely been blessed.

Christmas isn’t just about receiving gifts. It’s about knowing where you come from and how to find yourself back home. I found myself. Have you found yourself?

You can look back 10 years from now and ask yourself the same question. I bet you that you have lost yourself several times and it took your family to bring you back to reality. Reality is just over the horizon.

Other than that, I am actually under the weather with a cold. Who else is under the weather? It just the season. Though it doesn’t snow here, I still hoped it would. When I woke up, it was pouring down raining. I love the rain more.

I miss my grandma back home, and know that she is doing well… Makes me really excited. I love her and she keeps me strong. She raised me to know right from wrong, and make sure that any boy that makes me cry isn’t worth my time. She taught me how to love and to trust people. We can be stingy, but hey… That’s a Yankee for ya!

Even though I have received great gifts (iPod touch iOS 5, kinect, and a huge cupcake full of candy, and a Clemson sweatshirt), I loved seeing everyone open up their gifts. I also got a new tv which will be used really soon.

When Tony opened up his gifts… I am so happy he loves his kindle fire.

Life couldn’t be more perfect.
